近年全球健康產業快速發展,消費者對天然植物來源、永續利用及高附加價值健康素材的需求持續提升。植物在生長與發芽過程中,會產生多種具生理活性的次級代謝物,因此植物芽體逐漸成為全球機能性食品與天然素材研究的重要方向。
花生(Arachis hypogaea L.)為全球重要農作物之一,除了提供油脂與植物性蛋白質來源外,花生芽亦為花生種子經由發芽過程所形成之新生植物素材。近年研究發現,花生經發芽後,其植物化學組成會產生變化,包括白藜蘆醇(Resveratrol)、多酚類(Polyphenols)、類黃酮(Flavonoids)及其他植化素(Phytochemicals)等活性成分,展現其作為植物機能素材之應用潛力。
然而,目前國內外花生芽相關研究與市場應用,多集中於特定活性成分分析或單一部位利用,對於花生芽全株之活性成分分布、最佳化萃取技術、功能性評估及多元應用方向,仍具有進一步探索與開發空間。
因此,本命題希望透過系統性研究花生芽全株之機能成分與應用價值,建立其作為植物機能素材之科學基礎,並探索其於功能性食品、營養食品、天然保養品、頭皮與毛髮護理、動物保健及植物性原料等領域之商品化應用潛力。
透過研究成果,期望提升花生農業資源價值,建立由產地、生產、研發至商品化的一體化植物機能素材開發模式,推動台灣農業朝向高附加價值、永續及創新應用方向發展。
In recent years, the global health industry has experienced rapid growth, driven by increasing consumer demand for natural plant-derived ingredients, sustainable resource utilization, and high-value functional materials. During plant growth and germination, various biologically active secondary metabolites are produced, making plant sprouts an emerging research focus in the fields of functional foods and natural bioactive ingredients.
Peanut (Arachis hypogaea L.) is one of the world’s major agricultural crops, serving not only as an important source of edible oil and plant-based protein but also as a potential source of functional plant materials through germination. Recent studies have demonstrated that germination can significantly alter the phytochemical profile of peanuts, including bioactive compounds such as resveratrol, polyphenols, flavonoids, and other phytochemicals, indicating their potential as valuable plant-based functional ingredients.
However, current research and commercial applications related to peanut sprouts mainly focus on specific bioactive compounds or individual plant components. Comprehensive investigation of whole peanut sprouts, including the distribution of functional compounds, optimized extraction technologies, functional evaluation, and diversified applications, remains an area with significant potential for further exploration and development.
Therefore, this project aims to systematically investigate the functional components and application potential of whole peanut sprouts, establish a scientific foundation for their development as plant-based functional ingredients, and explore commercialization opportunities in functional foods, nutritional products, natural cosmetics, scalp and hair care, animal health products, and other plant-derived ingredient applications.
Through the outcomes of this research, we aim to enhance the value of peanut-based agricultural resources and establish an integrated development model connecting cultivation, production, research and development, and commercialization. This initiative will contribute to advancing Taiwan’s agricultural resources toward higher value-added, sustainable, and innovative applications.
